WHITE RICES - PADANO
It is discussed of a middle rice of japonica type. The Padano rice is a laughter mainly for soups, to the stoves the padano rice is also for preparations that involve different phases of cooking, like the baked laughter and the supplì. If it is preferred it to the tooth it is timely not to cook it beyond the 15 minutes. For the arancini, the cooking can prolong itself until 18 minutes but alone because in this case is preferable overcook the product to give back the softest arancino and homogenous to the mastication.
